A VOYAGE THROUGH TIME and across the globe, The Last Drop’s Infinitum Rum is an epic blend born from hundreds of duty suspended samples collected during the year 2000. This remarkable bottling is a truly international spirit.

What happens to old pre-shipment or retained samples? In this case, having been kept for the required time for quality management purposes, the decision was taken to decant all the rum samples into a recycled rum cask made of oak in December 2000. Marked with CMS, after the Main Rum Company’s longest serving member of staff Christine Margaret Southern, it was sealed and left to slumber in a Liverpool warehouse.

Consisting of various aged rums from a wide array of distilleries, the Infinitum stayed in the same cask for over 22 years. The result of this maturation is an intricate dance of flavours from a diverse line-up of countries including Guyana, Jamaica, Trinidad, Barbados, Venezuela, Guadeloupe, Brazil, and Saint Lucia.

The rum’s soul lies in its varied still types, combining the character of pot stills and column stills in a melodious blend.

TASTING NOTES BY IAN BURRELL, THE RUM AMBASSADOR

APPEARANCE: Light amber in colour, the rich beading gives a hint of the treasure that awaits.

NOSE: This rum oozes sweetness, with honeycomb, nutmeg and allspice. The initial aromas are followed by citrus marmalade and stewed fruit. The aromas open to a cedarwood scent, speaking of its long years in oak barrels.

PALATE: The natural sweetness leads to an array of tropical spices. Allspice, nutmeg and gingerbread layer the tongue with a tingling of cloves. The mouthfeel is of light oak and new leather.

CONCLUSIONS: This rum has a dry finish, and hidden in this unique and multi-faceted blend, you will find a whisper of the rums of Guyana, Jamaica and Trinidad, among many others. A dry finish of white pepper, hot spices, light oak, leather, tannins, citrus peel combine in harmony culminating in a delightful rum that can be sipped all year round.
